It begins with the sea. Crudo brings bright, clean lines: oysters lifted by sweet sake and finger lime, and an Orkney scallop paired with green tomato and pickled seaweed. From there, the rice rolls on: yuzu trout maki, glazed eel and tamago, and expressive temaki such as crab with cucumber and yuzu kosho or toro taku threaded with daikon and kizami sansho. For purists, nigiri might arrive piece by piece, from otoro to A5 wagyu.
