Souk

Souk charts a fragrant course through Morocco and the wider Maghreb into the vibrant Covent Garden. Slow-cooked traditions and market-side spirit meet on a menu that favours warmth, spice and the gentle sweetness that runs through the region’s cooking. It is food built for conversation, generous in spirit and confident in flavour.

A bowl of harira soup sets the tone, its lentils and chickpeas lifted by gentle spices, while pastilla layers shimmering filo with chicken, almond and a brush of honey. From the tagines come comforting riches: lamb jewelled with prunes and apricots, or slow cooked beef with roasted onion, peas and potatoes. The grill brings its own pleasures in a grilled seabass fillet dusted with Moroccan spices, or a mixed grill of chicken, lamb cutlet and merguez.

Couscous anchors the table, whether topped with spicy merguez or gathered into a royal couscous with tender beef and chicken. Plant-led dishes are no afterthought: a tagine of vegetables scented with saffron, prunes and apricot raisin, and a couscous with root vegetables and chickpeas sit alongside bright salads from Casablanca and Marrakech.
