At Everest Dine in Hinckley, the kitchen leans into Nepalese and North Indian traditions, celebrating spice, smoke and slow marinades.

Here, the tandoor shapes the story, and plates arrive with an easy confidence that favours balance over bravado. For those in search of spice-led comfort and charcoal-kissed cooking, Everest Dine offers a considered journey across beloved classics and house favourites.

The opening act is invitingly familiar: onion bhaji and vegetable samosa paired with the tang of tamarind, a bright note that sets the pace. From there, the grill takes charge. Chicken tikka and tandoori chicken emerge with that sought-after char, their warmth grounded in careful spicing rather than heat alone, a reminder that fire can be both deft and generous.

Signatures carry the banner high: the Everest special king prawn platter folds in mushrooms and beans for texture and depth, while Kathmandu kukura is all aromatic allure. For a gentler finish, chicken Nepal weaves coconut and almonds into a soothing, rounded curry, and garlicky vegetables offer a fragrant counterpoint.
