dinner

In the heart of the Brighton Lanes, The Flint House is Ben and Pamela McKellar’s modern restaurant and bar, part of the Gingerman Restaurant Group. Its split personality charms: counter-level dining for close-up theatre, a glamorous first-floor restaurant with a cocktail bar, and a rooftop terrace that catches the city’s buzz. The tone is polished yet playful, suiting spontaneous drinks as much as a dressed‑up evening.

The kitchen leans into small plates made for sharing, with flavours that roam from Mediterranean brightness to Middle Eastern spice and a touch of Latin lift. Think oysters sharpened with jalapeño, lime and cucumber granita; za'atar roasted carrots on spiced hummus; tempura shiitake with parsley mayo; and barbecue‑seared meats where chimichurri and honey and chipotle marinades add a flicker of heat. Braised squid with black olive crumb nods to the coast, while desserts keep things light‑footed.

Glasses are well filled, from spritzes built on Aperol or Campari to a considered run of wines by the glass, poured to match the mood. Come Sunday, the roast takes centre stage with Yorkshire pudding and crisp potatoes in tow. Grab a perch at the counter, slip upstairs for cocktails, or claim the terrace; bring an appetite and let the small plates do the talking.
