In Belfast’s Cathedral Quarter, Six by Nico Belfast spins a fresh culinary tale every six weeks. Each six-course tasting is guided by a theme, a destination or a bright idea, inviting diners to trace a narrative from amuse to finale. It is clever cookery with a wink: familiar memories recast through technique, texture and an eye for flavour. The result is a vibrant, frequently refreshed atmosphere where curiosity is rewarded with surprise.

Comfort is elegantly subverted. An egg with a brioche soldier arrives plumed with cacio e pepe espuma and the season’s white asparagus. Sausage and mash is reimagined with andouille and malted barley, a cloud of potato and cheddar, and a sparkle of quince and mustard caviar. On the vegetarian path, a crisp sandwich becomes a supple raviolo layered with truffle pecorino, tartare Jersey Royal potato and summer vegetables, with toasted sourdough for crunch.

Nostalgia sweetens the finish: jam roly-poly returns as a feather-light romp of butterscotch Angel Delight, strawberry and almond, lifted by basil sorbet. The room hums with a vibrant, frequently refreshed energy as themes evolve and palates are surprised. Be quick, though—the chapter turns every six weeks. Book a table, bring your appetite, and let six courses tell you a tall, tasty tale.
