Nestled on the edge of Manchester's city centre, Vermilion stands as a beacon of opulence and culinary excellence. This three-storey venue seamlessly blends lavish design with a vibrant atmosphere, offering guests an unforgettable experience.

The interior, conceptualised by Miguel Cancio Martins—famed for his work on Paris's Buddha Bar—exudes a pan-Asian aesthetic. Grand stone lions greet guests and traverse a moat to enter the shimmering silver edifice. Dark wood screens, ornate carvings, and ambient red lighting create an intimate and exotic ambience.

At the heart of Vermilion is its pan-Asian restaurant, where culinary artistry takes centre stage. The menu is a harmonious fusion of Thai, Indian, Japanese, Korean, and Chinese cuisines, reflecting the rich tapestry of Asian flavours. Signature dishes include giant tandoori king prawns marinated with Indian spices, garlic, and yoghurt, cooked in a clay oven, and served with mint sauce. Another standout is the grilled whole seabass, grilled and deboned at the table, marinated in seasoned Thai sauce, lemongrass, and Thai herbs, and delicately wrapped in a banana leaf. For meat enthusiasts, the lamb shank massaman curry offers a rich fusion curry from South Thailand, with coconut milk, potatoes, and Thai mixed herbs.

Complementing the dining experience is the Cinnabar cocktail lounge, where expert mixologists craft theatrical cocktails in a setting that combines luxury with comfort. The lounge's design, featuring cocoon-like booths and panoramic views of the venue, provides an ideal backdrop for both pre-dinner drinks and late-night gatherings.

Vermilion is not just a restaurant—it's a destination where art, culture, and cuisine converge, offering guests an unparalleled journey through the senses.
