Executive Chef Dave Ashton creates seasonal menus that showcase the very best North West ingredients, paired with innovative cooking techniques and refined flavours.

Expect flavour-led dishes that celebrate quality ingredients with a creative edge. Starters may include pork belly with pickled shimeji and a light, aromatic broth, or a modern take on beef tartare with mustard, dill pickle and a hint of Monterey Jack. From the grill, Cumbrian beef takes centre stage, alongside skewers of chicken or pancetta-wrapped lion’s mane mushroom.

Mains feature favourites such as spring lamb with wild garlic and morel mushrooms, or pan-fried stone bass with fresh green vegetables and crisp potatoes, while classic sides like triple-cooked chips and curry-salted onion rings complete the experience.

Desserts offer a perfect finish, from rich banoffee fondant to a bright passion fruit meringue pie.
