Mater1a is an intimate 16-seat restaurant from Michelin-starred chef Victor Garvey. Designed as his own personal world, it offers guests the rare opportunity to experience his cooking in a setting that feels relaxed, immersive and closely connected to the chef.

Garvey’s years in Japan influence a tasting menu built around restraint, balance and purity of flavour. Exceptional seasonal ingredients take centre stage in dishes such as Atlantic hiramasa with ponzu jelly and umami pavlova, abalone chawanmushi with smoked potato and truffle, and A5 Kobe wagyu cooked over a tabletop hibachi.
