In Liverpool City Centre, Franco Manca celebrates the simple beauty of Italian sourdough.

The focus is on honest flavours and well-judged balance: bright tomatoes against creamy mozzarella, peppery rocket beside silky buffalo mozzarella, and the gentle chew of a slow-risen base bringing it all together.

Antipasti set the tone, from mixed olives nestled with baby plum tomatoes to a generous charcuterie selection. Then come the sourdough pizzas: a classic Margherita for purists, or prosciutto e funghi, where roasted cured ham and white mushrooms meet molten mozzarella. Breads and bites add aromatic comfort, with pizza bread scented with rosemary and garlic, and garlic bread crowned with mozzarella or seasonal pesto. Dips range from basil pesto to scotch bonnet chilli for those who like a little fire.

For something lighter, the artichoke and butternut squash salad with mixed grains, semi-dried tomatoes, spinach and rocket is bright and satisfying, while a simple caprese keeps things timeless. To finish, affogato offers a cooling contrast to hot espresso, and cheesecake arrives with a flourish of Amarena cherries.

Settle in for a quick slice or make an evening of it. Book a table and let the sourdough do the talking.
