Shayan Persian Kitchen has been threading the aromas of saffron, pomegranate and time‑honoured spices through Hove, Brighton for two decades.

This is a place where recipes carry stories and plates arrive with a sense of Persian warmth, inviting diners on a gentle culinary journey rather than a hurried meal, where the vibe is leisurely and the conversations just come easy.

The opening act favours contrasts: cool, creamy hummus and salad oliveh set an easy rhythm, while smoky aubergine takes centre stage in kash-e bademjan and mirza ghasemi, all lifted by herbs and a whisper of tang. It is a study in texture and balance, the sort of cooking that lingers in the memory long after the last dip of flatbread.

From the charcoal grill comes fragrant theatre: joojeh makhsoos off the bone and succulent lamb ribs, with the Shayan mix for two offering a convivial spread to share. Those drawn to the sea will find simple, confident grilling in seabass and salmon, while slow-simmered comfort arrives with khoresht gormehsabzi and khoresht gheymey, joined by thoughtful vegetarian counterparts.

For something casual, koubideh and chicken shish wraps deliver familiar pleasures with Persian character. Dessert keeps the tone graceful and unshowy: flaky baklava alongside Persian ice cream to round things off.

Guests are invited to settle in, savour the spice trail, and let the evening unroll like a well‑told tale.
