In the heart of Brighton’s city centre, Fumi Japanese is a serene oasis shaped by the Japanese notion of “Ichi-go ichi-e” — the belief that every encounter is unique and to be treasured. Here, time slows, hospitality is thoughtful, and the room finds harmony between flavour, service and design.

The kitchen follows the seasons and its own creative mood, crafting a simple, Japanese-inspired menu that lets pristine ingredients speak. Produce, meats and fish are sourced from small, local suppliers; nothing is mass-produced or served out of season. From sea to field, flavours are clean, nuanced and quietly umami-led, with a confidence that prizes freshness, balance and restraint. It is farm to table in spirit, expressed with understated elegance.

Thoughtful pours echo the kitchen’s ethos: wines come from small producers, mostly natural and organic, who favour minimal intervention and maximum character. Set where an old market once stood, the setting carries a gentle nostalgia while feeling refreshingly modern and community-minded. Settle in, relish the moment, and let Fumi turn a one-of-a-kind dinner into a memory. Reserve your spot, savour the season, and dine in the now.
