Set at the Waldorf in Aldwych, Homage lives up to its name, tipping its hat to beloved classics while embracing a quietly modern polish. The kitchen favours clear, confident flavours and meticulous presentation, the sort that lets fine ingredients and deft technique do the talking.

Openings are reassuringly British with a cosmopolitan lift. A gently spiced coronation chicken finds contrast and smoke on charcoal bread, nostalgic yet neatly tailored. Prawns and crayfish arrive with a light citrus cream on seeded bread, a bright, saline whisper of the shore balanced by silk and crunch. It is food that understands restraint, rhythm and texture.

The finale flirts with theatre. Red Velvet Curtains draws back to reveal a vanilla cream cheese centre wrapped in chocolate sponge and a red velvet glaze, indulgence set to a glossy cadence. Mirror, Mirror pairs dark chocolate and blackberry with a cep marquise beneath a gleaming chocolate mirror, an unexpectedly woodsy note playing against deep fruit and cacao.
