Openings are reassuringly British with a cosmopolitan lift. Gently spiced coronation chicken finds contrast and smoke on charcoal bread, while prawns and crayfish arrive with a light citrus cream on seeded bread, offering bright coastal flavours balanced by silk and crunch.

The finale flirts with theatre. Red Velvet Curtains draws back to reveal a vanilla cream cheese centre wrapped in chocolate sponge and a red velvet glaze. Mirror, Mirror pairs dark chocolate and blackberry with a cep marquise beneath a chocolate mirror, allowing unexpectedly woodsy notes against deep fruit.
