In the kitchen, the mood is generous and flame-led. Think grilled halloumi with sweet chilli, houmous slicked with chilli oil and warm pitta, and bowls of marinated olives to prime the palate. From there, flame-grilled chicken arrives by the quarter, half or whole, burgers, wraps and pitta are stacked to order, and a 35-day-aged ribeye calls to committed carnivores. Meat-free diners are well served too, not least with a halloumi house burger.
