The journey opens with freshly chargrilled flatbreads, from truffle-aged cheese with pine honey to oscietra caviar over cultured sour cream. Mezze follows in the form of cacik, muhammara and hummus, alongside isili patlican, where walnut meets silky aubergine purée.

From the embers comes depth and richness. Wagyu kofte is tucked into lavash with white bean tahini, while lobster arrives with toasted agan, garlic butter and lime. Mains such as pistachio lamb cutlets, sarma beyti, wagyu iskender and kuzu sis carry the signature of smoke and careful charring.
