Brighton's newest fine dining experience, Dilsk, treats its guests to an expertly crafted culinary voyage inspired by the South Coast. Offering elegance and relaxation at its finest, Dilsk exudes an aura of refinement and calm, complete with an onus on sustainability and ethically sourced ingredients.

The tasting menu at Dilsk showcases the finest produce from local growers. By combining traditional flavours with modern techniques and refined technical skills, the Dilsk kitchen creates beautifully presented plates that grace the palace of taste.

Expect dishes such as Langoustine, served upon a bed of custard, Nuthbourne tomato and consommé, to wafers of melt-in-the-mouth monkfish, cooked to perfection and paired with asparagus, morels and kelp. The extensive wine and cocktail list expertly matches these dishes, enhancing every flavour and taste.

The soothing atmosphere at Dilsk means diners can unwind and let the staff take care of their every need, as their caring and knowledgeable team guide you through the menu in a friendly, unobtrusive way — leaving you with the lingering feeling that the evening you have just experienced will be treasured for a very long time.
